Coco-Walnut Snack Balls

Healthy food can still be sweet and delicious! This easy snack is one you won’t be able to put down.

I was browsing for healthy snacks that we could take with us on a recent road trip, and found this recipe and decided to give it a try.



1 c. soaked and dried raw walnuts (Or pecans if you prefer!)
1/4 c. coconut oil
7 dried organic dates
2/3 c. unsweetened coconut flakes
2 Tbs. raw unfiltered honey


First, grind up the soaked and dried walnuts in your food processor. It will start to kind of turn into walnut butter. But, it doesn’t have to go all the way to butter status if you don’t want. Just get them good and chopped up. Place the walnut butter in a kitchen aid or mixer, and set aside.

Next, pit your dates and grind them up in your food processor. I cut them into smaller pieces before putting them in the food processor since they are pretty sticky. Add the dates and your remaining ingredients to the walnut butter. Mix well until it forms a sticky paste.

And now, form them into balls. (Or if you want to be not nearly as fun, you could pat them down into a pan and cut into bar shapes. Lame.)

Put your balls in the fridge. They will harden a little because of the coconut oil which makes them much more convenient for eating than a sticky paste.

Now, if you really want to get fancy, you could go ahead and roll your balls around in some cocoa powder. I am definitely going to try this the next time I make these, they could even pass as a simple dessert!
